Kaizen

Call them “ghost”, “virtual,” or “cloud” kitchens. Regardless of the name, the idea of restaurants with their own menus and brands but no on-site dining was already taking off in 2019. The pandemic of 2020 has only accelerated the trend, sometimes without much transparency. A single kitchen may prepare several types of food under myriad brands with availability limited to third-party delivery services with steep fees. Taqueria La Hacienda

 

When should a food truck make the transition to a fixed, bricks-and-mortar location? That’s a simple question with a complex answer that may be different for each individual case. In some situations, it happens quickly, within just a few years. Other mobile operations never settle into one place, and once in a while, owners go in the other direction: closing a restaurant and switching to a food truck. With taquerias, however, there often seems to be a middle ground that involves operating in a truck but keeping the vehicle parked at the same location every day. State 48 Brewery

There are two explanations for how Surprise, Arizona, got its name. One is that the burgeoning exurb was named for the village of Surprise, Nebraska. Another is that the founder said she’d be surprised if the community ever amounted to anything. Given the growth of Surprise, the city has amounted to something, but it’s only in the last few years that Surprise-based businesses have garnered a reputation elsewhere in the metropolitan area. One of those, State 48 Brewery, has made a journey of over 20 miles via Grand Avenue to open in downtown Phoenix. Continue reading “State 48 Brewery”

Provecho

Whether it’s “bon appetit” in France or “guten appetit” in Germany, many cultures have familiar expressions that can be used to start a meal. In Mexico, “buen provecho” fulfills that function. Strangely, there seems to be no equivalent phrase in English, but the increasing diversification of downtown Phoenix’s food options, particularly the recent and long-overdue proliferation of Mexican restaurants that are far less Americanized than in previous decades, provides plenty of opportunity to say the phrase.
